Ingredients of Lebanese Chicken Wings

For the marinated jawaneh dajaj (chicken)​:

  • 1 kg chicken wings
  • 2 tbsp plain yogurt
  • 2 tbsp vegetable oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp red chilli powder
  • ¼ tsp black pepper
  • ½ tsp Lebanese seven-spice blend
  • ¼ tsp cumin (optional)
  • Juice of 1 lemon
  • ½ tsp salt

For garnish:

  • Chopped parsley or cilantro
  • Lemon wedges

Instructions to Follow

Step 1: Prepare the Marinade

In a large bowl, mix yoghurt, vegetable oil, garlic powder, smoked paprika, chilli powder, black pepper, seven-spice, cumin, lemon juice, and salt. Stir well until the marinade is smooth.

Step 2: Marinate the Chicken Wings

Add the chicken wings to the marinade, ensuring every piece is coated evenly. Cover the bowl and refrigerate for a minimum of 12 hours. For deeper flavour, marinate for up to 24 hours.

Step 3: Choose Your Cooking Method

  • Oven Method: Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper and arrange the wings in a single layer. Bake for 30-40 minutes, turning halfway through for even cooking. For extra stickiness, brush the wings with pomegranate molasses and honey during the final 5 minutes.
  • (Jawaneh Meshwi)​ Grill Method: Heat your grill to medium-high. Grill the wings for 10-12 minutes per side until cooked through and slightly charred.
  • Frying Method: Heat oil in a skillet over medium heat. Fry the wings until golden and crispy, about 8-10 minutes on each side. Drain on paper towels before serving.

Step 4: Garnish and Serve

Sprinkle freshly chopped parsley or cilantro over the wings. Serve with lemon wedges and pair with dips like garlic sauce or tahini for a complete experience.
